100 day food story day 7 - My famous Tower House breads

The Tower House breads.
Today I am showcasing the selection of breads that we serve here at The Tower House BnB, THOMASTOWN.

The first bread has quiet diverse ingredients , some that you might not be familiar with, but readily available  in health food sores. It a low-carb bread and it is also G/F. 

The second bread is a Guinness & Walnut Bread which is very dark but quiet delicious, especially  when paired with smoked salmon or a sharp cheddar. 

The third bread is The Tower Brown Bread and goes down a treat with our guests. On our breakfast menu I serve it toasted with Mediterranean Scrambled Eggs finished with melting Brie and chives. There are a lot of choices on our breakfast menu to tantalise the tastebuds, at last count I think I counted 10 hot dishes - ‘hard choices’.

The Tower House low carb gluten free bread.

LOW CARB GLUTEN FREE BREAD
.
Makes 1 loaf.

​Ingredients:                                         
250 grms. of greek yogurt.
3 eggs.                                                 
100 grms ground almonds.      
12 grms coconut flour. 
​3 tablespoons of chia seeds.
1 teasp. gluten free baking powder.              

1/2 tablespoon psyllium powder. 
Small pinch of salt. 
15 grms sunflower seeds. 

Method:
  1. Put all the dry ingredients into a bowl.
  2. Mix the yogurt with the eggs.
  3. Mix the dry with the wet.
  4. Pour into lined loaf tin & place in a preheated oven (190 cen) for 45 mins.

The Tower House Walnut and Guinness bread.
Walnut & Guinness Bread.
Makes 1 loaf.

Ingredients.                                                     
210 grms. brown flour.                             
103 grms. white flour.
25 grms.  white sugar.  

A pinch of salt.                                                      
6 grms.  baking soda.                                                 
10 grms. of porridge.                                       
40 grms.  of chopped walnuts( keep 10 grms back for the top)
250 mls of milk.
​40 grms golden syrup.                                        

70 grms. treacle.                                            
25 grms. melted butter.                                           
70 mls Guinness.

Method:
  1. Pop  all the dry ingredients into a bowl.
  2. Mix milk, syrup, treacle, melted butter and Guinness together.
  3. Mix the wet with the dry.
  4. Pour into lined loaf tin.
  5. Scatter top with walnuts.
  6. Pop into pre-heated oven (175cen) for 55 minutes.

​THE TOWER HOUSE BROWN BREAD.
Makes 1 loaf.

Ingredients.                                        
125 grms brown flour.                 
125 grms white flour.                           
Pinch of salt.                                       
1 tea.sp. bread soda.                    
60 grms porridge.                        
30 grms dark brown sugar.                   
40 grms of mixed seeds.
275-280 mls of buttermilk.

Method:
  1. Pop all the dry ingredients into a bowl and give everything a good mix making sure there are no lumps in the bread soda.
  2. Pour in the buttermilk and mix well.
  3. Pour into a lined loaf tin and bake in a preheated oven (190 cen) for 50 - 55 minutes.
