Finishing up our soup journey with a bit of luxury today. Let's say goodbye to February with an aromatic and delicious Prawn & Coconut Soup with Asian flavours.
Prawn & Coconut Soup with Asian flavours.
Serves 4-6.


Ingredients:
2 tablespoons green curry paste.
2 pieces dried lemon grass.
3 dried kaffir leaves (remove just before serving the soup)
300 mls of vegetable stock.
400 mls coconut milk.
1 tablespoon fish sauce.
225 grms of cooked, peeled prawns, try to use the best you can afford. 
1 bag of stir fry vegetables.
To finish, juice of 1 lime , chopped , spring onion chopped & chopped fresh coriander.

Method:
  1. Put the curry paste in a pan , add the lemon grass & kaffir leave and sweat for 1-2 minutes.
  2. Then the bag of vegetables & the stock.
  3. Bring to the boil & simmer for 5 minutes.
  4. Add the coconut milk & fish sauce. 
  5. Reduce for 5 minutes, add prawns & pull off the heat.
  6. Finish with lime juice, chopped coriander & spring onion.
