A new twist on a fillet of hake - Day 23 of 100 food stories

​Continuing on our fish journey, today I am giving a new twist on a fillet of hake.
I have a craving for comfort food, cauliflower cheese kept going around in my head, but I didn’t want that, but I still wanted cauliflower.
​

So this is the dish that I created and I must say I am very pleased with it.



Fillet of Hake with a cauliflower cheese crust, on a scallion mash with lemon butter sauce.
Serves 2


Ingredients:​
2 fillets of hake.
4 florets of cauliflower, grated.
Handful of grated cheddar.
1 teaspoon of curry powder ( this is the game changer)
2 tablespoons creme fraiche.
Drizzle of oil.
Salt & pepper.
500 mls of cream.
Seasoning.
Juice of 1/2 lemon.
1 teaspoon Dijon mustard.
Splash of white wine or cider.


Method:
  1. Preheat the oven to 190.
  2. Place the hake fillets on a baking tray lined with parchment.
  3. Put the grated cauliflower and cheddar in a bowl. Add curry powder, creme fraiche & seasoning. Mix with clean hands & press into the fish. Pop into the oven for 12-15 minutes.
  4. Meanwhile make regular mashed potatoes, add chopped scallions, milk & butter. Season to taste.
  5. To make the lemon sauce, pop the cream, lemon juice, mustard & cider or wine in a pot. Bring to the boil and simmer for 5 minutes until it begins to thicken. Check seasoning and add chopped chives.​
