Bacon & Apple Salad with a warm Cooleeney Camembert Cheese Dressing.
1 tablespoon Irish Rapeseed oil.
100 grms of a good dry cured bacon, cut into dice. (I use O'Neill's, available in most supermarkets)
1 eating apple, cored and sliced.
A knot of Kerrygold.
Torn iceberg and mixed leaves salad.
Squeeze of lemon juice.
Cooleeney Camembert Cheese Dressing:
150 mls of cream.
2 tablespoons cider.
2 teaspoon Dijon mustard.
50 grms Cooleeney.
Dash of cider vinegar.
Bunch of chives.
