Veggie Fritters with Smoked Salmon & Chive Sour Cream.

​Today's recipe is a doddle to make. You can change around the vegetables.  Great for lunch, it's gluten free and light on the tummy.  Served with the smoked salmon & sour cream & chives,  you could add some diced avocado 😘

Veggie Fritters with Smoked Salmon & Chive Sour Cream.

Ingredients:
Serves 2.

1 large courgette, grated.
1 carrot, peeled & grated.
2 scallions, washed & chopped.
A good bunch of chives, chopped.
Small bunch of fresh mint, chopped.
170 grms gram ( chickpea) flour.
2 eggs.
Seasoning.
100 mls of water.
1 tablespoon oil.
Smoked salmon.
Sour cream.

Method: 
  1. Grate the carrot & courgette & place in a bowl.
  2. Add chopped spring onion, chives, mint & seasoning.
  3. Add in the gram flour, eggs & water & give everything a good stir.
  4. Leave it stand for 10 minutes to allow the flour to absorb the liquid.
  5. Heat oil in a pan. Drop in spoons of the batter. Let it settle for a few minutes then flip over. Continue until all the batter is used up.
  6. Serve with the smoked salmon & sour cream & chives.​
