Churros but not goodbye! - Day 100 of 100 Food Stories?

Brings back happy memories working in Spain as a teenager.
For my final recipe on this 100 day journey, I have the Spanish street food treat  Churros which I've paired with Chocolate Orange Sauce. In my teenage years working in Spain, I first came across these being made in a barrel of oil.  The vendor piped lengths of batter into the hot oil and drew out these churros which were then dusted in sugar and dipped in chocolate sauce.  Enjoy this traditional Spanish snack in the April sunshine or any day that takes your fancy.

Over the past year, I've been receiving calls - and often a cry for help! - from people who are cooking for themselves and their families and want to make sure that they're making healthy choices while at the same time tempting and easy to put together.

I believe that food is medicine and we have never been more conscious of this than at this time when we have little choice but to cook for ourselves.   It's time to make cooking less of a chore and begin a new relationship with food  so that we can enjoy making ingredients work for us in a tempting, delicious and nourishing way regardless of dietary needs or choices.

I'm launching a series of midweek and weekend workshops with cooking demonstrations and my own brand of 'no-nonsense' food talks, beginning this summer.  I'll be announcing dates as soon as we are given the go-ahead to safely return to small group gatherings.  In the meantime you can register your interest in booking a Tower House workshop and food demonstration course for yourself, your family or your club etc.

Thank you for your company over the past 100 days of this journey which has kept me occupied in the way I love most - creating new recipes with healthy, seasonal and nutritious food (with dietary requirement variations where possible).   And  thanks also to Mike and Emma for being the often enthusiastic 'guinea pigs' for a new recipe each day.

Churros with Chocolate Orange Sauce.
Ingredients:
Serves 2.
37 grms of butter. 
160 mls water.
1 egg.
125 plain flour.
1/2 teaspoon baking powder.
2 teaspoon caster sugar.
1 teaspoon cocoa powder.

Chocolate sauce:
100 grms dark chocolate, chopped.
Zest & juice of 1 orange.
100 mls cream.


Method:
  1. Put all the ingredients for the chocolate sauce in a bowl & pop in the microwave for 3 minutes. Remove & give it a good stir.
  2. Put the water & butter in a pot. Place on the hob & bring it up to a rolling boil.
  3. Turn down the heat, add the flour, mixing well & continue to cook for 1 minute.
  4. Remove pan from the heat, beat in the egg & finally the baking powder.
  5. Turn on fat fryer to 180.
  6. Put the mix in a piping bag & when the oil is at the correct temperature, pipe lengths of the churros into the oil, nipping them off with a scissors.
  7. When nice and crispy, remove & drain on kitchen paper.
  8. To finish roll in caster sugar & cocoa and serve with the hot chocolate sauce.
