Today I have a recipe for darne of Salmon with a broccoli, hazelnut & Parmesan crust on a bed of creamy spinach & mushrooms. This is just bursting with vitamins and one of those dishes that make you feel the goodness.

Darne of Salmon with a broccoli, hazelnut & Parmesan crust on a bed of creamy spinach & mushrooms.

​Ingredients: 
Serves 2.

2 darnes of salmon, skinned. 
4 broccoli florets, grated.
Grated zest of 1/2 lemon. 
10 hazelnuts chopped.
2 teaspoon creme fraiche.
10 mushrooms, sliced.
2 peeled & chopped  cloves  garlic.
1 teaspoon nutmeg.
1 bag of spinach.
2 tablespoons oil.
Seasoning.
3 tablespoons cream.

Mix the broccoli & lemon together and press onto the salmon then top with the chopped hazelnuts.

​Method:
  1. Turn oven to 190 cen.
  2. Put the salmon on a baking tray. Spread the salmon with the creme fraiche.
  3. Mix the broccoli & lemon together & press onto the salmon. Top with the chopped hazelnuts , drizzle with 1 tablespoon oil & pop into oven for 12 minutes.
  4. Meanwhile add the rest of the oil to a pan & heat. Add the mushrooms and garlic & cook for 5 minutes.
  5. Then add the spinach, nutmeg and seasoning. 
  6. Let the spinach wilt for a few minutes & add the cream. 
  7. Simmer for 2 minutes & remove.​

To plate:
Put spinach & mushroom sauce on the plates, remove salmon from the oven & place salmon in the centre.
