Delicious turkey and vegetable patties served simply in a brioche bun with mango mayonnaise.

Today I have created delicious turkey and vegetable patties, bursting with flavour, goodness and natural ingredients.  I have served them simply in a brioche bun with a mango mayonnaise and a salad of raw broccoli, sun dried tomatoes, cherry tomatoes, feta cheese & a walnut oil.

These patties will last in the fridge for 3 days. Double the quantities to have something on hand for when ‘The Munchies" strike!

Ingredients:
400 grms of turkey mince.
1 courgette, grated.
1 carrot, grated.
50 grms of grated cheddar.
2 tablespoons of mango chutney.
25 grms of dried apricots, chopped.
1 teaspoon ground cumin.
Salt & pepper.
2 tablespoons chopped fresh coriander.
2 chopped spring onions.
1 glug of oil.

Method:
Oven @ 190.
  1. Into a bowl( I find disposable gloves good for this exercise) pop in all the listed ingredients except the olive oil.
  2. Mix well together & form into patties.
  3. Pop onto a lined parchment tray, drizzle with the olive oil  & put in oven for 18-20 minutes.
  4. Remove from oven & put in toasted brioche buns that have been smeared with a mayo & mango chutney mix.

Serve with a salad of raw broccoli, sun dried tomatoes, cherry tomatoes, feta cheese and a walnut oil.
