Like all good stir fries, you need to have everything prepared before you start cooking.

Duck & Noodle Vegetable stir fry with Cashews, Spring Onion and Chilli.

Ingredients:


Duck marinade.

2 cloves of garlic, peeled & chopped.
1 thumb size piece of ginger, peeled & chopped.
1 tablespoon sesame oil.
2 tablespoons soy sauce.
1 tablespoon honey.  
Place the above ingredients in a zip lock bag.
2 duck breasts, sliced very thinly.


Vegetables.
1 courgette, chopped small.
1 carrot, peeled & chopped into thin slices.
1 red onion, peeled & thinly sliced.
1 red pepper, deseeded & sliced.
1/4 bag of spinach.
1/2 bag of noodles steeped in hot water according to ptk instructions.


Garnish.
1 red chilli, sliced thinly.
1 spring onion , chopped.
25 grms cashews.
Handful of chopped coriander.
Blue or regular sesame seeds.

Finish with scattering over the cashews, spring onion, poppy seeds, chilli slices & chopped coriander.

Method:
  1. Place the sliced duck and  the marinade ingredients in a zip lock bag and leave to marinate for 1 hour.
  2. Prepare the vegetables and set aside.
  3. Prepare the garnish and set aside. Like all good stir fries, you need to have everything prepared before you start cooking.
  4. Okay let’s go, put a wok on the heat and let it become smoking hot.
  5. Strain the duck and keep the marinade. Add duck to the wok and cook for 5 mins, getting it as crispy as possible. Remove and set aside.
  6. Add the vegetables (with the exception of the spinach), to the wok along with the strained marinade. Cook for 3-4 minutes.
  7. Then add the soaked & strained noodles and the spinach,   then  mix everything  well together.
  8. Heat a separate pan and when it is smoking hot add the duck to reheat and crisp up further.
  9. To serve, place the noodle and vegetable stir fry in the middle of the plate. Place the hot crispy duck on top. Finish with scattering over the cashews, spring onion, poppy seeds, chilli slices and chopped coriander.
