I am using chicken thighs as the darker chicken meat is slightly higher in protein than breast. Also they have loads more flavour & are friendly on the pocket. You can make this dish in advance and pop it into the oven for 30 minutes if using white rice. I used brown basmati rice so that will take about 45 minutes.
Ginger, Chill Chicken and Mushroom Rice
2 tablespoons of oil.
6 chicken thighs.
2 cloves of garlic, peeled & chopped.
Thumb piece size of ginger, peeled & chopped.
150 grms brown rice.
100 grms mushrooms cut in quarters.
300 mls of chicken stock.
50 mls of cider.
Sweet chilli sauce.
