Yes it has most of the traditional ingredients, it’s just its execution is quiet radical, which I believe brings it to a new level.
Tower House Irish Stew.
300 grms diced lamb, all fat removed.
4 lamb cutlets.
2 carrots peeled, cut into 6 batons, trimming to be used for lamb stock.
1/2 leek, cleaned and chopped.
1 white onion, halved.
1/3 of peeled turnip cut into 8 batons.
3 celery sticks, cut into 6 batons, trimmings to be used for lamb stock.
4 peeled rooster potatoes, cut into 8 square chunks, trimmings to be kept.
100 mls of cream
Salt & pepper.
1 tablespoon oil.
1 knob of Kerrygold.
