After a request to do more fish dishes, I will be dedicating this week to all things FISH.
First up is Family Friendly Fish Cakes. Theses are a doddle to make, great to get ‘smaller people’ to eat fish and the added bonus they freeze brilliantly. So maybe double up & freeze some for days when you are under pressure. They go against all my teaching, microwaving fish😂, but boy does it work, I promise.
1 pack Seafood or Fish pie mix(320 - 400grms)
3 chopped spring onion.
100 mls milk.
450 grms of potatoes, peeled.
75 grms of of frozen sweetcorn, defrosted.
Handful of grated cheddar.
Small knob of butter.
A little flour for dusting.
Panko breadcrumbs ( I find Dunnes best for these)
