Todays soup is peach, pepper & tomato.
Very simple to make but packed with flavour. As well as a delicious soup, it also doubles up as an excellent sauce to accompany chicken or pastas.
Peach, Pepper and Tomato Soup.
1 tablespoon oil.
1/2 onion chopped.
1 clove of garlic, peeled.
3 - 4 tinned peaches.
1 teaspoon 5Spice powder.
2 red peppers, deseeded & chopped.
6 sprigs of fresh mint or 1 tablespoon of mint sauce or jelly.
1 carton of passata.
1 tablespoon bouillon.
250 mls of water.
Glug of cream.
I roasted some chicken supremes, put them on a bed of cooked tagliatelle with the ‘sauce’ and scattered over some grated Parmesan.
