Well deserved nourishment after a workout!
​ Todays soup is - Chunky Bolognese Soup with penne & olive oil toasts.

This soup provides a good balance of protein & carbohydrates from lean minced beef and whole meal pasta - ideal to aid muscle recovery after exercise.
Don’t worry vegetarians & vegan,  I have a similar idea for all you exercise enthusiasts to help your muscle recovery after a workout, coming to you in the next few days.

Preparing the ingredients for making Chunky Bolognese Soup with penne & olive oil toasts.

Chunky Bolognese Soup with penne & olive oil toasts.

Ingredients:
2 teaspoon oil.
3 onions, finely chopped.
3 cloves of garlic, finely chopped.
3 carrots, peeled & diced.
2 sticks of celery, diced.
250 grms of good mince.
1/2   bottle of passata.
1 tin of cherry tomatoes.
1 tablespoon vegetable bouillon.
1 dessert spoon brown sugar.
2 teaspoon chilli flakes.
Seasoning.
4 sprigs of thyme. 
1 bayleaves.
1  teaspoon smoked paprika.
100 grms whole meal pasta.
1.3 litres of boiling water.
45 grms grated Parmesan & extra for garnish.
6 basil leaves, chopped.
French stick, cut in pieces, toasted & drizzled with olive oil.

​Method:
  1. Heat the oil in a large saucepan & sweat off the onions, garlic, carrot &  celery for 5 minutes. 
  2. Then add the mince & brown well. Add thyme , smoked paprika & bay leaves.
  3. Then add passata, cherry tomatoes, bouillon, chilli flakes, brown sugar & seasoning.
  4. Give everything a good stir & add the water.
  5. Bring to the boil and simmer for 10 minutes 
  6. Add the pasta & cook for another 8 minutes.
  7. Add the grated Parmesan, check seasoning.
  8. Ladle into bowls & finish with grated Parmesan, torn fresh basil & some extra chopped chill if you like (chillis are great for helping to burn fat)
  9. Serve with olive oil toasts.
