This soup provides a good balance of protein & carbohydrates from lean minced beef and whole meal pasta - ideal to aid muscle recovery after exercise. Don’t worry vegetarians & vegan, I have a similar idea for all you exercise enthusiasts to help your muscle recovery after a workout, coming to you in the next few days. Chunky Bolognese Soup with penne & olive oil toasts. Ingredients: 2 teaspoon oil. 3 onions, finely chopped. 3 cloves of garlic, finely chopped. 3 carrots, peeled & diced. 2 sticks of celery, diced. 250 grms of good mince. 1/2 bottle of passata. 1 tin of cherry tomatoes. 1 tablespoon vegetable bouillon. 1 dessert spoon brown sugar. 2 teaspoon chilli flakes. Seasoning. 4 sprigs of thyme. 1 bayleaves. 1 teaspoon smoked paprika. 100 grms whole meal pasta. 1.3 litres of boiling water. 45 grms grated Parmesan & extra for garnish. 6 basil leaves, chopped. French stick, cut in pieces, toasted & drizzled with olive oil.
