Forget greasy wings! My healthy take on Chicken Dippers with a Sticky Glaze are a just what the doctor would order.   These are truly delicious and I have made them Gluten Free  - with a very interesting coating.

Set up a station with the chicken, flour mix, egg & coating ingredients.

​Healthy Chicken Dippers with a Sticky Glaze.​


Ingredients:
Serves 4.

4 chicken fillets cut into thick strips - goujons.
25 grms cornflour.
25 grms coconut flour.
3 eggs,  beaten.
Coating.
75 grms  of sunflower , pumpkin seeds  & Brazil nuts blitzed in food processor.
50 grms ground almonds.
50 grms Parmesan.
50 grms coconut. 
Salt & pepper. 

​Drizzle of oil.

Dip the chicken pieces in the flour mix, then the egg & finally the coating mix.

​Glaze:
3 tablespoons sweet chilli sauce.
3 tablespoons soy sauce.
1 tablespoon honey.
1 teaspoon garlic granules.


Garnish:
2  chopped spring onion.
1 chopped red chilli.

To finish, scatter over the garnish.

​Method:
  1. Set up a station with the chicken, flour mix, egg & coating ingredients.
  2. Preheat the oven to 190.
  3. Mix all the coating ingredients together.
  4. Dip the chicken pieces in the flour mix, then the egg & finally the coating mix.
  5. Place on a baking sheet, drizzle with a little oil, pop into preheated oven & bake 15-18 minutes.
  6. Meanwhile put the ingredients for the glaze into a bowl, pop into the microwave & give it a blast of 4-5 minutes until it has slightly thickened.
  7. Remove the chicken from the oven, place in bowls, pour over a little glaze & serve the rest on the side.
  8. To finish, scatter over the garnish.
