​This week it is all about  
Nutritious Dishes for Ladies who are carrying’ Precious Cargo’.

​I will be doing dishes that are high in iron, folic acid and essential nutrients to make sure that bouncing bunnies arrive full of 'Joie de vivre’.

Of course the food is not just for these beautiful ladies, it is nutritious food for everyone - a diet full of lean protein, oily fish, as well as plant sources including dried fruit, green leafy vegetables and pulses.
Today I am kicking off with a powerhouse of wellness in Smoked Mackerel & Apple Fish Cake in an Oatmeal Crumb on a Beetroot & Orange Salad.
Normally we just put this oily fish on a salad and it can be quiet boring. A pkt in the fridge can transform a tasty, nutritious lunch for you.
Smoked Mackerel & Apple Fish Cake in an Oatmeal Crumb on a Beetroot & Orange Salad.

Ingredients:

Serves 2.

2 fillets of skinned smoked mackerel.
1 pink lady apple, unpeeled & diced.
2 teaspoon horseradish.
300 grms of cooked mashed potatoes.
2 spring onion, chopped.
Salt & pepper.
2 tablespoons porridge,:g/f if necessary.
1 tablespoon oil.
2 oranges, segmented.
2 balls of cooked beetroot.
A handful of chopped chives.
1 tablespoon creme fraiche.
Dash balsamic.

Arrange some dressed leaves on a plate, put salad of diced beetroot, orange segments and chopped chives in the middle and place fish cake on top.

​Method:
  1. Put the mashed potatoes in a bowl and add apple, spring onion and horseradish. Season, mix well together and shape into 2 cakes.
  2. Lay porridge out on a plate and press well into cakes. Pop into the fridge for 20 minutes.
  3. Meanwhile crack on with the salad. Put the diced beetroot, orange segments & chopped chives in a bowl. Add splash of balsamic and season.  Mix in the creme fraiche.
  4. Heat the oil in a pan, brown the fish cake quickly on both sides, turn down the heat & cook for a further 4 mins

​To serve:
Put some dressed leaves on a plate, put salad in the middle and place fish cake on top.
