This pepperonata or spicy tomato sauce is extremely versatile, will last up to 10 days in the fridge. Excellent with pasta, a base for pizza or served with simple grilled chicken or fish.
4 pieces of sourdough, grilled.
60 grms goats cheese.
8 leaves torn basil.
1 tablespoon oil.
1 onion, finely chopped.
1 clove of garlic, peeled & finely chopped.
1/2 red chilli, finely chopped.
1/2 tablespoons smoked paprika.
1/2 tablespoons sweet paprika.
Salt & a pinch of sugar.
125 grms passata.
10 cherry tomatoes.
250 grms roasted red peppers, from a jar, sliced.
125 mls water.
