​Pina Colada Rice Baskets with Smoked Paprika Grilled Salmon.

​Ingredients:
Serves 4.
400 grms of cooked basmati rice.
1  tablespoon oil.
2 cloves of chopped garlic.
A selection of finely chopped vegetables; carrot, spring onion, peppers, courgettes. 
Feel free to add frozen peas & sweetcorn towards the end.
2 tablespoons soy sauce.
2 tablespoons fish sauce.
2 tablespoons sweet chilli sauce.
1 fresh pineapple, skinned & diced. 
1 chopped red chilli.
A handful of coconut flakes.
Salt & pepper.
4 escalopes of Salmon.
2 teaspoon sweet paprika.
Chopped chives to garnish.

​Method:
  1. Heat the oil in a pan and add the carrot, pepper, courgettes, spring onion and garlic. Gently fry for about 5 minutes.
  2. Then add cooked basmati rice, frozen peas and sweetcorn.
  3. Add soy sauce, fish sauce, sweet chilli sauce and seasoning.
  4. Now add the chopped pineapple and give everything a good stir.
  5. To serve, put into pineapple shells. Top with coconut flakes and chopped chilli.
  6. Meanwhile dust the skinless salmon fillets with sweet paprika and a little oil and grill for 3 minutes on both sides.
  7. Finish with a good dusting of chopped chives..
