Today's recipe brings us to two-thirds of the way along our 100 days of food stories and I'm celebrating with this colourful, nutritious and surprisingly easy Nasi Goring, a famous dish from Indonesia and popular all over the world.
In keeping with the 'healthy option take-away' theme for Fridays, my recipe uses brown rice & loads of vegetables so in addition to healthy protein from the chicken, we also have a high level of zinc - vital in developing a great immune system - in the prawns.
3 tablespoons oil.
250 grms diced chicken.
250 grms prawns.
1 ptk of oriental style prepared vegetables.
2 cloves of garlic, peeled & chopped.
600 grms cooked brown rice.
3 tablespoons soy sauce.
1 tablespoon maple syrup.
1 tablespoon sesame oil.
1 teaspoon each of ground coriander, cumin, turmeric & chilli.
Chopped spring onion, chopped chilli, chopped coriander, sweet chilli sauce & a handful of peanuts .
