Saturday Brunching  -  Day 11 of my 100 day food story blog

Todays post is continuing on our vegan journey with two recipes that are ideal for 
‘Saturday Brunching’
Vegan Sweetcorn Fritters’ with chilli salsa. Serves 2. Also G/F.
I decided not to use flaxseed ( egg replacement) in these fritters. Instead I am making them with chickpea/ gram flour.
Ingredients.
100 grms of sweetcorn, tinned is fine.
75 grms gram flour.
1/2 teaspoon baking power.
1/2 teaspoon smoked paprika.
1/2 teaspoon ground cumin.
1chopped spring onion.
80 mls of water.
Salt & pepper.
Salsa.
1 green & 1 red chilli finely chopped.
1 chopped spring onion.
4 chopped cherry tomatoes.
Dash of olive oil.
Juice of 1/2 lime. 
Salt & pepper.


Method.
1.Make the batter with the flour, water & seasoning. Then add all the rest of the ingredients. Leave to stand for 10 minutes.
2. Heat a little oil in a pan. Let it get fairly hot, add in spoonfuls of batter and turn the heat right down. You need to cook them slowly to make sure the inside is cooked.
3.Mix everything for the salsa together & serve alongside the fritters.




Recipe two:

​Spicy Bean & Vegetable Burger. Vegan G/F. Makes 1 large or 2 smaller ones.

I am serving these in baby gem lettuce cups as most bun burgers have eggs in them.
Ingredients.
200 grms mixed beans, drained & rinsed.
150 grms cooked & mashed carrot & parsnip.
1 chopped clove of garlic.
Pinch of ground cumin, coriander & chilli flakes.
50 grms ground almonds.
30 grms of Panko breadcrumbs.
Salt & pepper.


Method.
1. Make sure the vegetables are cold. Crush the mixed beans with the back of a fork & mix the two together. 
2. Add the garlic, spices, ground almonds & seasoning.
3. They will be a little wet so place the burger on a piece of parchment. Sprinkle over 1/2 of the breadcrumbs & press over. Using the parchment flip them over & press in the rest of the breadcrumbs. Shape gently with your hands. If in a hurry pop them in the freezer for 20 minutes. If not pop them in the fridge for 1 hour to firm up.
4. Heat a little oil in the pan and when just hot pop in the burger, let it get a little brown, flip it over and turn the heat right down. You need to cook it through without burning the crumbs.

*Please note correction to Day 9 Hugs in a bowl.  The 
Beef & Guinness Casserole with bacon dumplings serves 4 and not 2 as originally stated.
