Beer Battered Fish Tacos.

​Sexy Beer Battered Fish Tacos - we are not minding calories today.
Crack open a beer? 
Even a nice glass or two of wine is on the menu.


BEER BATTERED FISH TACOS
Serves 4

Ingredients:

4 fillets of cod.
Pickled Onions.
150 mls cider vinegar.
1 teaspoon crushed coriander seeds.
1 teaspoon crushed peppercorns.
2  tablespoons sugar.
1 large red onion finely sliced.


Tartare Sauce:
4 tablespoons mayonnaise.
1 teaspoon Dijon mustard.
1 teaspoon chopped capers.
1 teaspoon chopped gherkins.
A handful of chopped chives & basil.
Dash of cream & seasoning.


Batter:
150 grms of flour.
75 grms cornflour.
A good pinch of salt.
230 mls of beer.


Fish:
Cod cut into bite size pieces.


To Serve:
Soft tortillas.
Shredded baby gem lettuce.
Sliced radishes.
Hot sauce.


Method:
  1. For the onion pickle, microwave the first 4 ingredients for 4 minutes, making sure the sugar is dissolved & pour over the sliced onions. Leave to marinate for half hour.
  2. Mix all the ingredients for the tartare sauce together & give it a good stir.
  3. Make the batter & leave to stand for 30 minutes.
  4. When ready to go,  preheat the oven. Then heat the oil in the fat fryer to 190. Dip the cod pieces in the batter and lower into hot oil. Cook for 3-4 minutes. Drain and keep warm in the oven.
  5. Turn off the oven & let the tortillas warm in the residual heat.
  6. Serve in a bowl with shredded baby gem, radish,& hot sauce on the side.
  7. Pile them high & 😉 ​
