Today's Spanish inspired recipe is super quick, super healthy and so very delicious.

​Smoky Hake, Beans & Greens.

Ingredients: 
Serves 2. Gluten free.

200 grms chorizo, skinned & chopped.
1 red onion, peeled & finely chopped.
1 clove of garlic, peeled & chopped.
260 grms spinach.
1 teaspoon smoked paprika.
1/4 red chilli.
400 grms cannellini beans, strained & rinsed.
Juice of 1/2 lemon.
Salt & pepper.
1 tablespoon olive oil.

Method:
  1.  Put half the olive oil in a pan and heat.
  2. Pop in the chorizo, garlic, onion and chilli.
  3. Cook out for 5 minutes and then add the beans and  the juice of 1/2 lemon.
  4. Meanwhile heat another pan with the rest of the olive oil, dust the hake fillets with smoked paprika. Place presentation side down. Leave for 4 minutes, then flip over & continue cooking on a moderate heat for 2 more minutes.
  5. Put the spinach in a colander & pour the boiling water from kettle onto it to wilt. Give it a good squeeze and add to the bean pan.
  6. Season with salt and pepper. 
  7. Place onto warm plates and top with the smokey hake fillets.
