The memory for this dish came from when we had a pub back in the eighties.
I had sweet & sticky wings on the menu. Always being in front of myself I used to serve them on a board with garlic bread and a finger bowl with a slice of lemon. One evening I was clearing a table from a gentleman who had ordered them. As I cleared the table I enquired if he enjoyed the ribs. He informed me that they were great but the soup served with them was - to quote him - 'very weak’. He was referring to the finger bowl!!
I had to wait until he was out of earshot before I burst out laughing 😂
Sweet and Sticky Pork Ribs.
2 racks pork ribs, 700 grms each.
2 tablespoons Chinese Five Spice Powder.
1 teaspoon sesame oil.
2 tablespoons soy sauce.
2 tablespoons honey.
1 tablespoon fish sauce.
Juice of 1 large orange.
Juice of 1 lime.
2 tablespoons water.
1 spring onion, finely sliced.
1 red chilli, finely sliced.
Don’t forget to serve with the ‘weak soup’ - the finger bowl!!
