Typical family midweek meal, Arroz con Pollo - a tasty  ‘one pot wonder’ - Day 95 of 100 Food Stories.

A typical Spanish midweek 'one-pot-wonder' meal.

​Arroz Con Pollo


Ingredients:

Serves 2.
4 tablespoons olive oil.
2 chicken breasts.
1 teaspoon paprika.
1 onion, roughly chopped.
1 clove of garlic, peeled & finely chopped.
1/2 chorizo, peeled & chopped roughly.
1/2 red & 1/2 yellow pepper, chopped roughly.
175 grms of paella rice, washed & drained.
200 grms chopped tinned tomatoes.
500 mls vegetable stock.
120 mls of white wine.
1 bay leaf. 
Salt & pepper.
10 green olives. 
Chopped parsley.

Tasty, colourful and convenient - Arroz Con Pollo - A Spanish Sensation!

​Method:
  1. Heat the oil in a pan, season chicken breasts with salt, pepper and paprika. Fry until nice and brown all over, remove and set aside.
  2. Add the onions and garlic and fry gently until they begin to soften.
  3. Add the chorizo and peppers and give everything a good stir.
  4. Add the rice and coat it with all the chorizo oil.
  5. Then add tomatoes, stock, white wine, bay leaf and seasoning.
  6. Return the chicken to the pan, put on a lid or a sheet of tinfoil and gently simmer for 30-40 mins until rice is tender. Make sure to keep it on a low heat.
  7. Give everything a good stir, add the olives and chopped parsley. ​
