My recipe today is Wild Garlic Pesto Chicken with Irish Buffalo Mozzarella. Wild garlic is in season now and this delicious pesto will keep in the fridge covered for 2 weeks. It's delicious with pasta, pizza or on toasted sourdough too.
Wild Garlic Pesto Chicken with Irish Buffalo Mozzarella
Serves 6 - 8
150 grms wild garlic leaves.
50 grms Parmesan.
1 clove of garlic, peeled.
1/2 lemon, zested & a few squeezes of juice.
50 grms walnuts.
150 mls rapeseed oil.
Salt & pepper.
2 chicken fillets.
1 ball of Irish Buffalo Mozzarella.
10 cherry tomatoes.
1 tablespoon rapeseed oil.
Remove & serve with vegetables & potatoes of your choice. Favourites in our house are duck fat roasties and buttered carrots😂
